Proper Sealing of Granite

Just had granite countertops installed in my kitchen
(Yellow River) which has cream, browns and slate blue colors running through it. The slate blue areas are more dramatic than the other colors (larger and wider).
Counter is shiney all over except for the slate blue areas, which seem to be broken through the surface feeling rough to the touch vs. smooth everywhere else.
Fabricator said that this is the nature of the stone and
nothing can be done about it. Can this be the result of
poor sealing or polishing? Should the surface be evenly smooth all over? Is there anything that can be done to correct this to insure an evenly shiney surface all over?
